Why does Vitamin C react with a starch-iodine solution, making it lose its blue-purple colour?
I’ve done a science experiment for school where starch and iodine are mixed together in water to make a dark purple-blue colour. I then had to add different fruit juices the juices made the blue colour go away according to the amount of vitamin c in them. I was jus wondering why this occurred, i need to scientifically explain it and i cant find a website that gives exact details. Please help!
here are the equations for what you see
ascorbic acid is oxidized to the hydorscorbate ion
C6H8O6 -> C6H6O62- + 2H+ +2e-
and the iodine is reduced to iodide
I2 _ 2e- -> 2I-
the loss of colour is the loss of the free iodine
